1 Pan Cod and Vegetable Dinner
Ingredients
- 4 8 oz Cod fillets
- 1 pint cherry tomatoes
- 12 oz fresh green beans
- salt and pepper to taste
- 2 tablespoon of Olive Oil
- 2 tablespoons of Lemon Juice
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
Directions
- Preheat Oven at 400 degrees. Line Baking sheet with parchment paper
- Place cod on baking sheet in 1 layer. Add cherry tomatoes on one side and green beans on the other side.
- Drizzle with Olive Oil and Lemon juice and sprinkle with salt and pepper to taste as well as thyme and garlic powder.
- Bake for 12-15 minutes or until the cod flakes easily with a fork
- Serve over couscous, quinoa, rice or with potatoes, or separate into containers for meal prep.
