Wake Up to This: The Best Breakfast Sandwich You’ll Ever Make

I just made these breakfast sandwiches for brunch and they were AMAZING! They take a little more time to prep than stopping at a drive through but I promise it will be worth your while and you’ll probably never want the drive through sandwich ever again -which is not a bad thing. The big takeaway here is the touche finale with a special ingredient that takes the sandwich to a whole new level – and it’s such a simple ingredient!

Ingredients

  • 2 hash browns
  • 4 strips of bacon (I used organic)
  • 2 eggs (I used organic free range)
  • 2 English Muffins (I used gluten free)
  • 1 Avocado
  • 4 slices of cheese (any cheese will do. I used grass fed)
  • Ghee or butter
  • 1/4 tsp. @pasthyme‘s Spicy Chili Oil
  • 1 tablespoon of local honey

Directions

  1. Preheat oven to 425 degrees.
  2. While oven heats up, prepare your hot honey mix. Mix the honey with spicy chili oil.
  3. Cut English muffin in half and spread butter on the cut sides.
  4. Cut Avocado in half and slices, and slice your cheese.
  5. Place hashbrowns and bacon on a baking sheet and bake for 10 minutes. Then flip and bake for another 10 min watching that your bacon doesn’t burn like mine did. I still used it. It added a little bacon flavor and crunch.
  6. Remove bacon and hashbrowns from oven and pour some bacon fat in a pan and heat on medium high. Why not. You’re already eating bacon anyway. When it’s nice and hot crack your eggs in.
  7. Cook the eggs as you like them, remove from pan.
  8. Toast the English muffins in the pan butter side down.
  9. Heat the hot honey in the microwave 5-10 seconds.
  10. Assemble the sandwich: English muffin, egg, cheese, hashbrown, bacon, avocado and drizzle with hot honey.
  11. Now enjoy your creation.

Note: You can opt to cook everything in a pan instead.
